Healthy Gluten-Free Rice Bread

This delicious and nutritious rice bread is perfect for those following a gluten-free diet. Made with simple ingredients and packed with flavor, it's a great addition to any meal.

Ingredients

  • 390g Medium Grain or Sushi Rice
  • 220g Water
  • 20g Brown Caster Sugar
  • 8g Yeast
  • 3g Salt
  • 20g Rice Bran Oil

Instructions

  1. Soak the rice in cold water for at least 2 hours. Preheat your oven to 170°C (338°F) and line a loaf tin with baking paper.
  2. Drain the soaked rice and add it to the blender cup. The drained rice should weigh 520g. If it weighs less, add a little water to reach 520g total weight. Add all remaining ingredients, including the 220g of water, to the blender. Blend the mixture until it becomes smooth and well combined.
  3. Pour the blended batter into your prepared loaf tin and let it sit for about 20 minutes. The mixture should rise up to about 90% of the tin's height.
  4. Place a piece of baking paper on top of the loaf tin and add a weighted object on top of the baking paper. This will help the bread rise evenly.
  5. Bake the bread for 50 minutes.
  6. Remove the bread from the oven and loaf tin, and let it cool completely before slicing. **Tip:** For best results, wait until the bread is cool to cut into it.
